With nearly two decades of experience — from NOMA 2.0 in Copenhagen to Restaurant Ikarus in Salzburg and CURE in Singapore — Chef Maksym has developed a refined and disciplined culinary language, blending European technique with an intuitive sensitivity shaped by Asia.
Here, the cuisine is not driven by fusion, but by the intention to express the sea in its many dimensions. From clarity and minerality, to warmth and layering, and finally to depth and intensity, the tasting menu unfolds as a progression — moving forward and returning to lightness.
This structure extends beyond flavour into ingredient selection and technique. Curing, aging, fermentation, and extraction are used not to add complexity, but to refine and reveal the essence of each ingredient. Elements such as yuzu kosho, miso, or beurre blanc are applied with precision — not to transform, but to extend the expression of the sea across different dimensions.

Beginning with sea urchin, lightly cured shima aji, Fjord trout, and Gillardeau oyster, the experience gradually unfolds through Brittany blue lobster, kinmedai, and Wagyu tenderloin, creating a balanced progression between marine freshness and deeper umami-driven flavours.
Elements such as kelp, tomato dashi, yuzu, brown butter, laksa, and fermented vegetables bring structure and complexity to the menu, while curated wine pairings and seasonal desserts complete the dining journey overlooking the Andaman Sea. Resort Chic Dress Code
We kindly invite our guests to embrace a resort chic dress code to complement the elegant ambiance of L’ARÔME BY THE SEA. Dressing up for the occasion is warmly encouraged. Please avoid athletic or sportswear, slippers, beach sandals, and flip-flops. Gentlemen are kindly requested not to wear sleeveless tops and open-toe shoes.
Children Policy
Children aged 7 and above are welcome to dine in our air-conditioned restaurant area. Younger children are invited to our rooftop casual dining area, which better suits their needs.
Corkage Policy
Guests are welcome to bring their own wine, subject to a corkage fee of 2,000 THB++ per bottle, which will be added to the bill.
Smoking Policy
Smoking is permitted only on our outdoor terrace. Marijuana smoking is strictly prohibited throughout the restaurant.

Standard Reservations: Cancellations made 72 hours or more prior to the reservation are 90% refundable (10% handling fee applies).
Cancellations made within 72 hours are non-refundable.
Festive, Collaboration, & Special Menus: The deposit payment is non-refundable under any circumstances.
Adjustments : The deposit will be applied to your dining bill.
Reservations may be rescheduled up to 90 days from the original booking date.
Confirmation Policy
Reservations will be prioritized and confirmed for guests who have completed the deposit payment.
