In July 2024, L'ARÔME BY THE SEA proudly announced the appointment of Adrien Delcourt, the former Executive Chef of the iconic Le Jules Verne** in Paris, as our new Executive Chef, infusing our kitchen with his unparalleled expertise and elevating our ocean dining experience to new heights.

Adrien Delcourt,
a distinguished chef trained under the Robuchon system and a trusted protégé of Frederic Anton, boasts extensive experience in Michelin-starred restaurants. His impressive resume includes prestigious establishments such as Le Pré Catelan (three stars) in Paris, L’Atelier de Joël Robuchon (two stars), Le Jules Verne (one star) atop the Eiffel Tower, and L’Orangerie at Four Seasons George V (one star). Adrien was the Executive Chef when Le Jules Verne was awarded it's first Michelin star in 2019 and Le Jules Verne was awarded two stars this year.
Throughout his career, Adrien has honed his culinary skills under the mentorship of renowned chefs like Frederic Anton, Axel Menes, and David Bizet, developing a unique cooking style. He is a dynamic and experienced Chef de Cuisine with over a decade of experience in starred restaurant and hotel kitchens. Adrien has a proven track record of managing kitchens and creating innovative dishes that delight customers, specializing in developing seasonal menus, and leading culinary teams in fast-paced environments. He is dedicated to providing exceptional customer service, outstanding hospitality, and high-quality cuisine.

New “Coucher de Soleil” Menu
Chef Delcourt and his team are delighted to debut the new “Coucher de Soleil” menu at L'ARÔME BY THE SEA. The menu is a discovery of the exceptional cuisine from Adrien, which pays homage to the mentors throughout his career and celebrates the best seasonal produce which the sea has to offer. Diners are welcomed with a fresh infusion of hibiscus which not only opens but also refreshes the palates for what lies ahead.
The "Coucher de Soleil" menu at L'ARÔME BY THE SEA celebrates the finest ocean delicacies and premium local ingredients. From the pristine waters of Japan and France, we feature delicate Japanese scallops, premium French turbot, and Kaviari’s luxurious Oscietra caviar. Adding a local touch, our Phuket lobster is elegantly served as a "macédoine," highlighting the island's seafood treasures. While seafood takes center stage, guests can also savor roasted duck sourced from Thailand’s renowned Klong Pai farm or choose an exceptional Japanese Wagyu beef for an elevated experience. The signature dish of Adrien’s menu is Langoustine Foie Gras, which shows a complex pairing between land and sea with a poached Atlantic Langoustine being served inside of a roti shell and pair with a delightfully creamy foie-gras jus. This dish shows off the key elements of Adrien’s culinary pillars: technique, savoir-faire and delicate balance.

Our wine menu boasts more than 200 varieties, predominantly from France, with an emphasis on Bordeaux and Burgundy. Besides, the selection encompasses numerous lesser-known appellations, showcasing the extensive terroir found in French wines and the vast array of styles that pair excellently with the culinary creations of L’ARÔME BY THE SEA.
Our cellar reflects the richness and diversity of French vineyards but not only that, we have also included some selections from across the world which help to elevate the overall offering giving guests a taste of what is not always possible in French winemaking. At L’Arome our cuisine is heavily influenced by the sea and this goes hand in hand with our current wine selection which has a heavier focus on white wines with texture and acidity to pair with the freshly caught seafood on offer.

Rooftop Bar - Drinking on the Andaman Sea
Situated atop L'ARÔME BY THE SEA, the sunset deck offers an ideal spot to relish imported seafood, champagne, and witness the sun dipping below the horizon. Guests can indulge in a range of French oysters, caviar, and other fish roes, paired with meticulously chosen champagnes. The Deck operates from 4pm until late into the night.

RESTAURANT POLICIES
Based on the invaluable feedback of our guests, we adhere to specific policies at L'Arôme by the sea.
MENU
We exclusively serve our "Vue Sur La Mer" or "Découverte" tasting menus. No A La Carte options are available for adults.
RESORT CHIC DRESS CODE
Our dress code is resort chic though we strongly recommend dressing up for the occasion. Athletic or sports uniforms, slippers, beach sandals and flip-flops are not permitted for dining on our restaurant level. Gentlemen must avoid any sleeveless clothing or open shoes.
FESTIVE DAYS
On festive day's only special menus will be served.
CHILDREN
We welcome children aged 7 and above to dine in our air-conditioned restaurant area. For younger children, we can offer dining in the rooftop area.
CORKAGE
A corkage fee of 2000฿++ per bottle will be charged to the bill if you bring your own bottle of wine.
SMOKING
Cigarette smoking is only allowed on our outdoor terrace and marijuana smoking is not allowed in our restaurant.
SPECIAL REQUIREMENTS
If your guest have any dietary requirement or allergies, or if you will celebrate a special occasion, please let us know in advance, so that our team can design a special menu for your guest. As our tasting menu features raw ingredients (eg. seafood ), guests are able to swap with dishes from our vegetarian tasting menu.
DEPOSIT PAYMENT AND CANCELLATION POLICY
Any reservation made by a guest/company can be amended or canceled up to 72 hours prior to the reservation time will incur a handling fee of 10% and 90% of the pre-payment will be returned. Any cancellation, no-show or change made less than 72 hours prior to the reservation time will incur a cancellation fee of the deposit which will be applied without any prior notice. The deposit will be adjusted against dinner at the restaurant. Please note that we cannot guarantee your booking until this deposit has been received.
