Restaurant Director

F&B manager of L’Arôme in the sky

 

Mission:

Helping the restaurant meet fine dining service, sales, and profit objectives along with supervising and directing associates in daily work activities

  • Manage and lead team on all daily operations

  • Develop talents and participate in training on services, beverages knowledge and other relevant skills to enhance service standards and quality

  • Help to develop marketing and promotional plans with the headquarter management team

  • Perform revenue and cost control in accordance to financial & budget targets

 

Profile:

  • French native

  • English and Chinese bilingual proficiency in spoken 

  • Minimum 5years proven management experience in Michelin background restaurants 

  • Impeccable presentation skills

  • WSET or relevant certificates will be advantageous

  • Legally authorized to work in China or currently located in China with valid work permit/visa

  • Strong organisational and multitasking skills, with the ability to perform well in a fast-paced environment

Regional Executive Chef

(Asia)

The Regional Executive Chef (Asia) is expected to play an integral role in the menu design and other pre-opening missions for the group. 

 

Missions

 1. Pre-opening concept development in different cities / countries:

        Leading the creation and regular updating of the menu and all related technical sheets

        Contribute to the kitchen layout design and equipment checks

 2. Managing the operations:

        Recruitment & training of core team

        Enforcement of the hygiene and food safety standards

        Establishment of a work organization compatible with production and its contingencies

        Supervision of the entire production

 3. Contributing to the cost control:

        Supply and inventory management

        Develop and implement guidelines and control procedures for purchasing and receiving activities

        Carrying out ratios analysis 

 4. Team management:

        Motivating teams and assessing skills and potential

 5. Identifying operational deficiency and implementing corrective measures 

 6. Public relationship work

 

 

Profile

  1. Self-motivated and diligent

  2. Significant experience in fine dining sector / Michelin-starred restaurants

  3. Work experiences in Asia highly desired

  4. French & English fluency is a must
