"Schweizer Star Im Ausland (Swiss Star Abroad): Yannick Hollenstein runs one of the best restaurants on the holiday island and impresses with "L'Arôme by the Sea", right by the sea, especially with excellent seafood. The passionate chef and fisherman has "come to Phuket" to stay. GaultMillau distinguishes him as a "Swiss star abroad", and two of his former bosses are also happy about this: August Minikus and Andreas Caminada."
L'Arôme By The Sea Award Winning French Fine Dining Restaurant with Magnificent Sea View
Located in Kalim Bay, L'ARÔME BY THE SEA boasts a sophisticated design across its two unique spaces: the restaurant area that showcases the finesse and artistry of modern French cuisine with a touch of Swiss Alps influence, and a sunset deck ideal for relaxed sun set drinks, as well as for aperitifs or digestifs. The dining room, both stylish and serene, draws inspiration from its seaside location.
A blend of light and dark blue hues, paired with plush velvet furniture, provides a calming ambiance, allowing the culinary ary delights to be the main attraction. The L'ARÔME BY THE SEA experience is further elevated with seafront dining, accompanied by unobtrusive personalized service from the energetic and enthusiastic team.

"As native of Swiss Alps, I put my culture heritage into my interpretation of contemporary French cuisine. Alpine cuisine has always meant making the best of what is available in the region. At L’ARÔME BY THE SEA, I include exquisite delicacies from abroad such as French foie gras, Kristal caviar, Brittany blue lobster or Japanese Wagyu, but also work on exploration of regional produce as Phuket lobster, wild-caught Krabi blue crab, hand picked local clams or various indigenous plants. Surrounded by this tropical island scenery, I find inspiration in the rhythm of the waves crushing the shore. I am very excited for all that is coming. Each day brings my team and me closer to find our groove and truly create something unique and memorable."
- Executive Chef
Contemporary French Cuisine Inspired By The Sea
Chef Yannick combines French culinary techniques with his Swiss heritage to make new textures, flavors, colors, and smells.
L'ARÔME BY THE SEA's menu combines tradition and innovation. Chef Yannick showcases his Swiss Alps background with dishes like smoked cheese fondue ravioli. He also puts a modern twist on French cuisine with his duck foie gras served with rhubarb, el derflower, and tamarind. The menu also features honey-cured, beeswax-aged, and rosemary wood-smoked Muscovy duck served with red cabbage and blackberry.
In Phuket, Chef Yannick draws inspiration from the abundant local supply of fresh seafood, vegetables, fragrant herbs, and spices for his cooking. At L'ARÔME BY THE SEA, he integrates the use of high-quality imported goods like French oysters, turbot, and Japanese Se Busyu wagyu. He also emphasizes the use of locally sourced, seasonal produce whenever feasible, such as strawberries, peaches, and tomatoes from Chiang Mai, lobsters from Phuket, wild-caught blue crabs from Krabi, hand-harvested local clams, or locally cultivated sea grapes.
Our Menu Prestige is a 9-course meal that takes you on a memorable journey with precise execution and creative ideas. Over 300 fine wines from the carefully curated cellar harmoniously pair with the cuisine at L’ARÔME BY THE SEA.

Our wine menu boasts more than 200 varieties, predominantly from France, with an emphasis on Bordeaux and Burgundy. Besides, the selection encompasses numerous lesser-known appellations, showcasing the extensive terroir found in French wines and the vast array of styles that pair excellently with the culinary creations of Chef Yannick Hollenstein.
Our cellar reflects the richness and diversity of French vineyards but not only that, we have also included some selections from across the world which help to elevate the overall offering giving guests a taste of what is not always possible in French winemaking. At L’Arome our cuisine is heavily influenced by the sea and this goes hand in hand with our current wine selection which has a heavier focus on white wines with texture and acidity to pair with the freshly caught seafood on offer.
The extensive wine list of L’ARÔME BY THE SEA has already been awarded as one of the Best Wine List by Star Wine List.
