Why “Madame FAN”
Faced with the post-pandemic slowdown in consumption and increasing competitiveness in China, my passion for French gastronomy has prompted me to consider a new direction for us on the global stage. In China, my team and I have long explored our culinary identity, torn between our Chinese roots and our practice of French cuisine. We wondered how we could surpass the French in their own art. This reflection led me to rethink Chinese culinary elements, blending my cultural background and culinary skills with new innovative directions.
The opening of Madame FAN is the fruit of this reflection, a true tribute to the modernity of Chinese cuisine, breaking free from the confines of traditional classifications. I strive to capture 100% of the authenticity of Chinese flavors, enhanced by 30% with Western presentation techniques, for a final result that dares 130% innovation. For the Chinese, our cuisine awakens a deep, familiar nostalgia; for foreigners, it serves as an open window to the rich cultural and historical abundance of China. Madame FAN aims to offer an unprecedented sensory adventure, where each dish tells its own story, merging the elegance of Chinese dining with the sophistication of French culinary art.
As for the values of L'Arôme, I believe in "freedom of spirit, staying true to our roots, being faithful to oneself and sincere in action." These principles guide not only my personal journey but also our collective pursuit as a team.
